Collard Greens with Smoked Turkey


I prefer to purchase my greens already washed & cut. It costs more, but can you REALLY put a price on the convenience of not having to do it yourself to save time? LOL

Tenderize those greens with some honey!


My Favorite Apple Cider Vinegar


Swap out the butter for olive oil for a healthier choice.



Liquid Smoke = Secret Ingredient


The greens would be incomplete without fresh pressed garlic & hot sauce.




INGREDIENTS

3lbs smoked turkey wings
3lbs washed, cut collard greens
water
fresh pressed garlic (3 or more cloves)
1 tsp liquid smoke
1 tbsp honey
2 tbsp apple cider vinegar
1/3 cup olive oil
1/3 cup hot sauce
1 tsp each: poultry seasoning, dried thyme, lawry's seasoning salt,
2 tsp each: garlic powder, onion powder,

- Cook Smoked Turkey in pressure cooker with 2 cups water for 3 hrs. (until the meat falls off of the bone).
- Remove the turkey from the pressure cooker
- Reserve the liquid.
- Add 2 lbs washed cut collard greens
- Add 1 1/2 press garlic cloves
- Add 3/4 of the rest of the seasonings


-Cook collards for 7 minutes. Transfer to an seperate stock pot, reserving liquid.

Seperate skin & meat from bone. discard skin & bones. Add meat to the cooked collards.

Add remaining collards to pressure cooker. Cook for 4 mins. Transfer to the other cooked greens. Serve over rice.

Optional side dishes:
corn bread
baked whole grain rotini & cheese

All kinds of wow!!! Your photos are great too!! I've never heard of tenderizing with honey.

Wow thanks Missy! :O) yeah, a lot of people use sugar. I'm trying to get away from using it whenever I can. Also, u can throw the bags of cut up greens in the freezer for a while. I guess it's kind of like a 1st frost on greens. If that makes sense.
