Quick Baked Beans (Stovetop, NO PORK) PIC HEAVY



Beans are good for your heart. I'll leave it at that.
You can serve this as a main dish, or a side dish.

You can omit the bacon if you want it to be stricly vegetarian.
If you still want the smoky taste without the meat, you can add a tsp of liquid smoke.

INGREDIENTS

1 lb Beef Bacon (for pan drippings only)
3 Cans Vegetarian Baked Beans
1 Can Tomato Sauce
1 Onion Chopped(Doesn't matter what color)
2 Cloves Fresh Garlic (chopped)
1 Tsp Each: Onion Powder, Paprika, Chili Powder
1/2 Tsp Fresh Cracked Black Pepper
1 Tbsp Brown Sugar
1 Tsp Apple Cider Vinegar

DIRECTIONS:

1. Add Bacon to HOT pan to render fat.
(If you don't want to use this, you don't have to. You can just saute your onion/garlic in olive oil)

2. Remove Bacon from pan.
3. Add chopped onion/garlic.
4. Saute until Translucent.
5. Add beans to soft onions/garlic.
6. Reduce Temp to Medium High.
7. Add Tomato Sauce
8. Add Spices
9. Add Brown Sugar
10. Add Apple Cider Vinegar
11. STIR
12. Simmer on Low Heat for 10 minutes (until sauce thickens to desired consistancy)







Measure Seasonings & Set Aside



Chop Onions & Garlic & Set Aside



Add Bacon to Hot Pan



Remove Bacon from Pan, Reserving Fat & Pan Drippings



Add Chopped Onions/Garlic to Bacon Drippings



Saute Onions/Garlic Until Translucent



Add Beans to Softened Onions/Garlic



Add Tomato Sauce




Add Seasonings



Add 1 tbsp Brown Sugar



Add 1 tsp Apple Cider Vinegar



STIR

Simmer on Low Heat for 10 minutes



Serve over rice, or



Serve with an East Coast Dressed Hot Dog

Rice with Black Beans (Arroz Con Frijoles Negros)



This is a QUICK easy dish to prepare.
This can be prepared as a side dish or used as a main dish. Great with tacos.

You Will Need

1/2 c Chicken Stock (OPTIONAL)
















Chopped Onions & Garlic



Saute Until Translucent



Add Drained, Rinsed Black Beans



Add Diced Tomatoes with Juice



Add Drained Diced Tomatoes with Chilies



Add Both Pkgs Sazon



Add Dried Seasonings/Herbs



Add Sofrito & Recaito



Add Chicken Stock If Desired (Optional)



Stir



Medium Heat



INGREDIENTS

3 Cups of Rice
3 Cups of Water

2 cans Black Beans
1 can Diced Tomatoes
1 can Diced Tomatoes with Chiles
1 Yellow Onion
1 or 2 Cloves Garlic
1 rounded tsp Sofrito
1 rounded tsp Recaito
1 pkg Sazon with Garlic
1 pkg Sazon with Coriander
1 tsp Cumin


Cook 3 cups of rice & 3 cups of water in rice cooker. There is no need to add salt, as the beans are seasoned very well.

Chop an yellow onion & 1 or 2 cloves of garlic. Set Aside
Drain cans of beans & Tomatoes.
Add Olive Oil to heavy stock pan
Saute chopped onions & garlic.
Add to beans & tomatoes with chilies to pan.
Add a Crushed clove of Garlic.
Add 1 rounded teaspoon each of Sofrito & Recaito.
Add 2 pkgs of Sazon.
Add 1 teaspoon each of Garlic Powder, Onion Powder and Cumin.
Turn heat to Medium-High,until heated through.

Serve over rice.
Optional Toppings: Shredded Cheese, Sour Cream, Avocado, Shredded Chicken.
Sliced Green Onion.

Criss Cross Apple Crowns




This was a recipe which I prepared often during my days as a Pampered Chef Kitchen Consultant.

















Scoop the mixture & Place in Center of Dough Circle



Gather the edges & form a "beggar's purse"










Criss Cross Apple Crowns

4 small Granny Smith apples
1/2 cup chopped walnuts
1/2 cup raisins
3 tablespoon all purpose flour
1 tablespoon ground Cinnamon, divided
3/4 cup sugar, divided
1 package (17.3 ounce) grand-size flaky or buttermilk biscuits (8 biscuits)
1 package (10.2 ounce) grand-size flaky or buttermilk biscuits (5 biscuits)
1 tablespoon butter or margarine, melted
Vanilla ice cream or thawed, frozen whipped topping (optional)
Caramel ice cream topping (optional)

Preheat oven to 350°F.

Peel, core and slice apples. Place apples, walnuts, raisins, flour, 1 teaspoon cinnamon and 1/4 cup sugar in a bowl and mix well. Microwave apple mixture on high 3 minutes or until hot. Mix well. Separate 12 biscuits and place on cutting board.

Roll each biscuit into a 5" disk, flouring dough as needed. Arrange biscuits in a single layer on clean, flat surface.

Combine remaining sugar and cinnamon. Sprinkle 1/4 cup of mixture over biscuits. Divide apple mixture evenly onto center of each biscuit; gather up edges over filling, pinching to seal. Microwave butter about 15 seconds or until melted.

Holding each biscuit at sealed end, dip each biscuit into butter, then into remaining cinnamon-sugar mixture. Place biscuits, seam side down, into muffin pan. Do not press down into cup! Using a serrated bread knife, cut through top of each biscuit, making a crisscross pattern.

Bake 25-30 minutes or until golden brown. Remove from pan.

If desired, serve with a scoop of vanilla ice cream and drizzle with caramel sauce.

Yield: 12 servings.
