Pineapple Upside Down Cake

This cake is great for beginners. It's a time honored favorite. A wonderful cake for potlucks. I opted to use a square baker. However, you may use a 9" x 13" baker if you prefer.

Hands-On Time: 10 minutes
Total Time: 1 hour and 15 minutes
Servings: Makes 9 Servings.

Serve this traditional favorite warm from the oven.
Add a dollop of whipped cream to your Pineapple Upside Down Cake
and make it extra-scrumptious.

INGREDIENTS

1/2 cup (1 stick) butter
1 cup packed brown sugar
1 (20 oz) can pineapple slices
Maraschino cherries
1 pkg Yellow Cake Mix
1 pkg vanilla pudding mix (optional)

whipped cream or cool whip

DIRECTIONS

Preheat oven to 350 ºF.
Place butter in 9x9 inch pan. Place pan in oven to melt butter. Sprinkle with sugar. Arrange pineapple slices and maraschino cherries on sugar mixture.
Prepare cake mix as directed on package. (Add water to pineapple juice to get the amount of water suggested on cake box)
Pour batter evenly over fruit.
Bake 50 minutes or until toothpick in center comes out clean. Let stand 5 minutes. Invert onto large serving plate or cookie sheet. Serve warm with whipped cream.
