Cheesy Caesar Salad with Grilled Chicken



This is a really quick and easy recipe.
If you grill chicken ahead of time, you can simply add it to the salad. For this recipe, I chose the prepared frozen grilled chicken available at Aldi.
It only takes 15 minutes to bake your own croutons.






INGREDIENTS

2-3 Romaine Hearts (washed and cut)
Caesar Salad Dressing Click HERE for recipe.
Croutons Click HERE for recipe.
Grilled Chicken
*Optional Ingredients include Anchovies, Crumbled Egg, and Hot Peppers


DIRECTIONS

Wash and Cut Romaine Hearts.
Spin in a salad spinner if you hate excess water.
My family prefers the wet salad.
Add Croutons
Grilled Chicken
Toss
Add Cheesy Caesar Salad Dressing
Enjoy!

Cheesy Caesar Salad Dressing



INGREDIENTS

1 Lemon (juiced)
1/4 tsp Fresh Cracked Black Pepper
1 tsp Dijon Mustard (I used Honey Mustard)
1 tsp sugar (If you use sugar substitute, please do not use stevia, that combined with the citrus juice will have untoward digestive upset...agave nectar or honey would be better)
2 Fresh Pressed Garlic Cloves
1/4 cup grated Parmesan Cheese (I used Parmesan/Romano)
1/2 cup Vegetable Oil (I used Canola)

DIRECTIONS

When making salad dressing, I always add ingredients in the following order.
Acid, Seasonings, Sugar, Garlic, Oil. The Acid helps to dissolve salt, and sugar.
If you do not have a Measure Mix and Pour like I used, you may shake these items in a salad dressing jar or whisk in a bowl and transfer to a serving vessel.

1. Juice Lemon
2. Add Pepper, Mustard, Sugar, Garlic, and Parmesan Cheese.
3. Whisk or Shake.
4. Add Oil. (Whisk)
5. Store in Refrigerator until ready to pour over salad. You may need to remix the dressing just before serving.

Homemade Croutons


These taste so much better than the store bought variety.
No preservatives! Try this. (Special thanks from Brooke for the inspiration)

INGREDIENTS

1 loaf of french bread (or 1 1/2 hoagie rolls)
Olive Oil
1 tsp Sea Salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 or 2 fresh pressed garlic cloves (optional)















DIRECTIONS

1. Slice the bread in half lengthwise
2. Cut it into cubes
3. Drizzle with olive oil
4. Toss (I used my hands, but you may use tongs if you prefer)
5. Add salt, pepper, and other seasonings.
6. Add pressed garlic cloves.
7. Toss
8. Bake in the oven on 400 for 15 minutes.
9. Allow to cool.
10. Serve over salad or on soup.



If there are any leftovers, Store in an airtight container in the refrigerator.
