Touchdown Taco Dip






INGREDIENTS

16 oz Vegetarian Chili pureed
8 oz Neufchatel Cream Cheese
1 cup Light Sour Cream
2 Tablespoons Taco Seasoning Mix Click HERE for recipe
2 Pressed Garlic Cloves
2 ounces Cheddar Cheese (shredded)
1/2 cup Pitted ripe Olives (sliced)
2 tablespoons fresh snipped Cilantro
2 Roma Tomatoes, (seeded and chopped)
1/4 cup thinly sliced scallions with tops

DIRECTIONS
1. Preheat Oven to 350 degrees F.
2. Spread pureed Vegetarian Chili over bottom of pan.
3. In a large bowl, combine cream cheese, sour cream & taco seasoning.
4. Add pressed garlic. Mix well.
5. Spread over beans.
6. Sprinkle with shredded cheese
7. Bake 15-18 minutes or until hot.
8. Sprinkle Tomatoes, Onions, Olives and Cilantro Slice Olives.
9. Garnish with additional sour cream if desired.
10. Serve with baked Tortilla Chips.

Loaded Mashed Potatoes



This is a quick & easy recipe.
It makes a great side dish.
You could easily nuke a whole potato & just load it up.
It takes an hour to bake potatoes. When they are nuked, they are considered steamed.

1 box of 13 oz. Box Instant Mashed Potatoes
1 tsp Sea Salt

10 cups hot water

Follow the directions on the box to mix.
You can control your fat portions better by adding them to each individual portion.

Add toppings.

Toppings:
Shredded Cheddar Cheese
Sour Cream or Tofutti Better Than Sour Cream
Chives
Bacos (Imitation Bacon Bits ...soy product)
OR
Beef Bacon
Smart Balance tub margerine
Fresh Cracked Pepper

These are the toppings we like in our family.
You might also consider microwaving a 16 oz bag of broccoli cuts. Steam them.

Set up all the condiments & fixings on a lazy suzan.

This is a great set up for buffet style parties.
The kids LOVE to dress their own potatoes.

Tonight we had it with baked breaded Flounder. (Cape Gourmet Brand)
It's the BEST!
